Guatemalan Fiambre, New World Cuisine Style

Guatemalan Fiambre is a cold, brined (escabeche) and nutritious salad made with up to 12 meats, 8 cheeses, and finely chopped veggies. 

There are many local styles and finishes to satisfy the ultimate palate, but one thing is certain: "It's an extraordinaire dish from the Conquistador Era."
